BLT Cauliflower Salad
Bacon, lettuce, and tomato. They are a classic trio that taste amazing on two slices of bread with a slathering of mayo. I took this trio and turned it into a filling and refreshing salad.
I kept the base ingredients the same, but added some cauliflower florets and diced onion for some flavor and to make the salad more filling. What really sets this salad apart from all the other recipes, is the tangy and low-carb salad dressing.
To make it, I combined mayo with cottage cheese and some zesty spices! It’s actually pretty surprising how well mayo and cotta cheese taste together!
If you’re not a fan of the curds in cottage cheese, don’t worry. Puree the cottage cheese in a blender and it will be nice and smooth.
Low-Carb BLT Salad
This salad isn’t just low-carb, but it’s high in protein and healthy fats, too! Plus, with the tomatoes and lettuce, it’s a great source of fiber, too.
What really makes it an unforgettable and irresistible salad is the dressing. It’s a creamy dressing spiced with cumin, chipotle powder, and garlic powder.
If you want it to be spicier, add some red pepper flakes with a bit of cayenne pepper. You could also add some diced habanero peppers for a bit of heat and fiber, too.
Easy Cauliflower Salad
It seems like cauliflower gets a bad reputation for being bland. Many keto dieters get cauliflower rice fatigue.
I get it! If you feel that way, too, try this salad. After you smother the cauliflower in the tangy dressing, it will no longer have that earthy flavor.
But, if you’re really tired of cauliflower, you can replace it with cucumber or broccoli. Both of those choices will taste delicious with the bacon, lettuce, and tomato.
What To Eat With Salad

Salad Meal Prep
In order to keep everything tasting as fresh as possible, I suggest storing the veggies separately from the dressing. This will prevent the dressing from separating and not looking as good together.
The salad with the dressing will stay fresh in an airtight container in the fridge for up to three days.
The creamy dressing will stay fresh in the refrigerator for up to a week. This recipe is so easy to make that I suggest making it fresh each time.

Salad:

Dressing:

Directions
Bring a large pot of water to a boil. Once boiling, add chopped cauliflower for 5 minutes. Immediately drain and rinse with cold water. Set aside for now.
In a blender, combine all the dressing ingredients and pulse until you have a smooth consistency.
In a large mixing bowl, combine the cooked/cooled cauliflower, bacon, onion, tomatoes and mixed greens. Top with dressing and toss well.

- 3 slices Bacon cooked and crumbled
- 1/3 cup Onion chopped
