Ingredients

  • 1 tbsp Olive Oil
  • 1 Shallot finely chopped
  • 1 1/2 cups Cherry Tomatoes halved
  • 2 tsp Minced Garlic
  • 1/2 tsp Thyme
  • 1/2 tsp Basil
  • 1 Roma Tomato chopped
  • 3 tbsp Fresh Chopped Basil
  • 8 ounces Cream Cheese softened
  • 1/4 cup Sour Cream
  • 1/4 cup Plain Greek Yogurt
  • 1/3 cup Parmesan Cheese grated
  • 1 1/2 cups Mozzarella Cheese shredded

Instructions

  • Preheat the oven to 350 degrees.
  • Place the cream cheese, sour cream, Parmesan cheese and mozzarella cheese in a mixing bowl, and combine until well blended.
  • Heat the olive oil in a skillet over medium heat.
  • Add in the shallots, and saute for 3 minutes.
  • Mix in the garlic and tomatoes, and saute until the tomatoes have softened.
  • Stir in the thyme, basil and 2 Tbsp of fresh chopped basil.
  • Pour the tomato mixture into the cheese mixture, and stir to combine well.
  • Spread the mixture into an oven safe baking dish or skillet, and bake for 20 minutes.
  • Top the dip with the chopped roma tomato and remaining fresh basil before serving.
