Ingredients

  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1 Yellow Bell Pepper chopped
  • 1 Red Bell Pepper chopped
  • 2 tsp Minced Garlic
  • Juice from 1/2 A Lime
  • 2 tsp Cumin
  • 2 tsp Chili Powder
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1 cup Rotel
  • 1 cup Black Soy Beans rinsed and drained well
  • 3 cups Shredded Chicken
  • 3 cups Chicken Broth
  • 1/2 cup Heavy Whipping Cream

Optional Garnishes

  • Jalapeno Slices
  • Keto Tortilla Strips
  • Sour Cream

Instructions

  • Melt the butter in a pot over medium heat.
  • Stir in the onions and bell peppers. Saute until the vegetables have softened.
  • Add in the garlic, lime juice, cumin, chili powder, oregano, and paprika. Saute for 30 seconds.
  • Mix in the Rotel and black soy beans.
  • Pour in the chicken broth and season with salt and pepper to taste. Simmer for 15 minutes.
  • Add in the chicken and heavy whipping cream. Simmer for another 10 minutes before serving with your choice of toppings.
