1Yellow Bell Pepper chopped
1Red Bell Pepper chopped
2tspMinced Garlic
Juice from 1/2 A Lime
2tspCumin
2tspChili Powder

1cupRotel
1cupBlack Soy Beans rinsed and drained well
3cupsShredded Chicken
3cupsChicken Broth
1/2cupHeavy Whipping Cream

Instructions
Melt the butter in a pot over medium heat.
Stir in the onions and bell peppers. Saute until the vegetables have softened.
Add in the garlic, lime juice, cumin, chili powder, oregano, and paprika. Saute for 30 seconds.
Mix in the Rotel and black soy beans.
Pour in the chicken broth and season with salt and pepper to taste. Simmer for 15 minutes.
Add in the chicken and heavy whipping cream. Simmer for another 10 minutes before serving with your choice of toppings.
