If you love chicken and spice, and Chick-Fil-A is one of your favorite restaurants, then I’ve got the perfect soup for you. I replicated the popular Tex-Mex soup for the best chicken restaurant.
It tastes just like it – but it’s safe to eat on a keto diet. It’s really easy to increase the heat without adding more carbs.
This low-carb soup has 7 grams net carbs in each serving. Yes, that’s a bit high for a keto-friendly recipe, but it’s worth every carb and with the right amount of planning, you can enjoy a filling bowl of this savory soup.
Low-Carb Chicken Tortilla Soup
If you have ever made tacos or a keto taco soup, then you might already have the ingredients that you need. The ingredients in this soup are pretty basic.
To the chicken broth base, I added Rotel tomatoes, lots of spices, some bell peppers, shredded chicken, and even some black soy beans.
There are a bunch of different things that you can add on top as garnishes, too. Add some sliced jalapenos, keto tortilla strips, and even some sour cream.
Copycat Chick-Fil-A Tortilla Soup
How spicy do you like your soup? This is a pretty mild one because I was trying to replicate the popular soup from Chick-Fil-A.
If you want it to have more heat, then I suggest sauteeing some poblano peppers in place of half of the red bell pepper. You could also add some hot sauce to the soup.
The black soy beans are completely optional. I added them because the original soup has black beans.
Since black beans aren’t keto-friendly, black soy beans are the best substitute. They’re high in fiber and protein, so they’re really good for you but if you don’t like the flavor or the texture, you can leave them out.
Keto Chick-Fil-A Recipes
I’m a huge fan of Chick-Fil-A! When I started keto, I was afraid that the only thing I could eat there would be grilled nuggets.
I started to make some copycat recipes. And they really do taste like the real thing!

For lunch, you could make either Keto Chick-Fil-A Copycat Chicken Salad or Keto Chick-Fil-A Tenders & Copycat Sauce. And then serve it all with a glass of iced Keto Sweet Tea.
How To Store Soup
This low-carb chicken tortilla soup is perfect for your meal prep. Store it in an airtight and spill-proof container in the refrigerator for up to three days.
You can also freeze the soup, too! Let it cool completely, then place it in a freezer-safe and resealable food storage bag.
Put the bag of soup on a baking tray and place it in the freezer. After it’s frozen solid, remove the baking sheet. Keep it in the freezer for up to six months.

Ingredients:
Butter
Onion
Yellow bell pepper
Red bell pepper
Minced garlic
Juice of a lime
Cumin
Chili powder
Oregano
Paprika
Rotel
Black soy beans rinsed and drained well
Chopped or shredded chicken
Chicken broth
Heavy whipping cream
Optional toppings:
Jalapeno slices
Keto tortilla strips
Sour cream
Instructions
Melt the butter in a pot over medium heat. Stir in the onions and bell peppers. Saute until the vegetables have softened.
Add in the garlic, lime juice, cumin, chili powder, oregano, and paprika. Saute for 30 seconds.
Mix in the Rotel and black soy beans.
Pour in the chicken broth and season with salt and pepper to taste. Simmer for 15 minutes.
Add in the chicken and heavy whipping cream. Simmer for another 10 minutes before serving with your choice of toppings.

- 1 Yellow Bell Pepper chopped
- 1 Red Bell Pepper chopped
- 2 tsp Minced Garlic
- Juice from 1/2 A Lime
- 2 tsp Cumin
- 2 tsp Chili Powder
- 1 tsp Oregano
- 1 tsp Paprika
- 1 cup Rotel
- 1 cup Black Soy Beans rinsed and drained well
- 3 cups Shredded Chicken
- 3 cups Chicken Broth
- 1/2 cup Heavy Whipping Cream
Optional Garnishes
- Jalapeno Slices
- Keto Tortilla Strips
- Sour Cream
