1zucchinigrated
1/2cupbutter melted
3tbspgranulated sugar substitute
3eggs
1tspvanilla extract
1 1/2 cupsalmond flour
2tbspcoconut flour
2tspbaking soda
1/2tspsalt
1/2cupsugar-free chocolate chips
1/2cup chopped walnuts, peanuts or pecansoptional
Instructions
Grate the zucchini and squeeze with a paper towel to remove excess moisture.
In a large bowl, stir together melted butter with sugar substitute.
Add 3 eggs and vanilla. Mix well.
Stir in flours, baking soda and salt.
Fold in the zucchini, chocolate chips and walnuts, peanuts, or pecans. Pour into a prepared loaf pan. Top with additional chocolate chips, if desired.
Bake at 325 for approximately 50-60 minutes, or until an inserted toothpick comes out clean.
Remove and let the bread cool in the pan.
