Ingredients

  • 1 zucchini grated
  • 1/2 cup butter melted
  • 3 tbsp granulated sugar substitute
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 2 tbsp coconut flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar-free chocolate chips
  • 1/2 cup chopped walnuts, peanuts or pecans optional

Instructions

  • Grate the zucchini and squeeze with a paper towel to remove excess moisture.
  • In a large bowl, stir together melted butter with sugar substitute.
  • Add 3 eggs and vanilla. Mix well.
  • Stir in flours, baking soda and salt.
  • Fold in the zucchini, chocolate chips and walnuts, peanuts, or pecans. Pour into a prepared loaf pan. Top with additional chocolate chips, if desired.
  • Bake at 325 for approximately 50-60 minutes, or until an inserted toothpick comes out clean.
  • Remove and let the bread cool in the pan.
