Zucchini is one of those low-carb veggies that is packed with nutrients. It is so good for you! Since it is so high in fiber, it helps you have a healthy digestion system. It can also help to reduce blood sugar levels, which in turn leads to a healthier heart and weight.
But did you know it can also help your vision? Yup! It has lots of vitamin A in it which supports both your vision and your immune system.
When you are on a low-carb diet, it is important to eat plenty of protein – and this bread has walnuts, almond flour, and coconut flour in it. These three things are all made up of mostly protein! It’s so good for you. Seriously, enjoy a slice for a snack, breakfast treat, or even a dessert.

I know there are lots of other ways to make chocolate chip zucchini bread, but this recipe is one of the best ones I have ever tasted. It has the perfect texture. It’s not too dry and is just crumby enough without falling apart. Plus, you just can’t go wrong with the chocolate chips! It’s the chocolate chips that makes this taste like a dessert.
Make plenty of this bread – you might want to double the recipe and make 2 loaves. Kids love this bread and will eat it up before you have a chance to enjoy it.
In fact, you can even pour the batter into a greased muffin tin and make zucchini muffins out of it.
This is also really easy to store and keep for breakfast all week. Just wrap it up with plastic wrap and keep it on the counter. You can also store it in an airtight container. It doesn’t need to be refrigerated. This will last about a week at room temperature.
This bread also freezes really well. Wrap it up tightly with aluminum foil and store it in a freezer-safe resealable bag. It will last about 6 months in the freezer.
Easy Zucchini Bread With Chocolate Chips
Feel free to change a few things in the recipe if you need to. The chocolate chips and the walnuts are completely optional. This cake will taste just as delicious without them.
One thing I wouldn’t try to change is the ratio of coconut flour and almond flour. Since coconut flour soaks up so much moisture from the other ingredients if you alter how much you use you run the risk of creating a bread that is either too soft or too dry.

Butter
Granulated sugar substitute
Eggs
Vanilla extract
Almond flour
Coconut flour
Baking soda
Salt
Sugar-free chocolate chips
Walnuts, peanuts, or even pecans – optional
1. Grate the zucchini and squeeze with a paper towel to remove excess moisture.
2. In a large bowl, stir together melted butter with sugar substitute.
3. Add 3 eggs and vanilla. Mix well.
4. Stir in flours, baking soda and salt.
5. Fold in the zucchini, chocolate chips and walnuts. Pour into a prepared loaf pan. Top with additional chocolate chips, if desired.
6. Bake at 325 for approximately 50-60 minutes, or until an inserted toothpick comes out clean.
7. Remove and let the bread cool in the pan.
