Ingredients

  • 1 1/2 pounds Beef Chuck Roast cut into bite sized pieces
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 3 tsp Minced Garlic
  • 2 tsp Ginger Paste
  • 2 tbsp Curry Powder
  • 1 large Turnip peeled and chopped
  • 1/3 cup Matchstick Carrots
  • 3 cups Coconut Milk

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Season the beef with salt and pepper to taste.
  • Saute the beef in the heated oil until browned on all sides. Remove and set aside.
  • Melt the butter in a pot over medium heat.
  • Place the onions into the pot, and saute until softened.
  • Stir in the turnips, garlic, ginger and curry powder. Saute another minute.
  • Pour the coconut milk into the pot, and stir to combine.
  • Add the beef and carrots to the pot, and bring to a light boil.
  • Reduce the heat to medium low, cover and simmer for 20-25 minutes until the turnips are tender.
