Tender bites of chuck roast and turnips are smothered in a slightly sweet and spicy ginger curry broth. This is a dairy-free and gluten-free stew that is so hearty and filling that you can eat it by itself for lunch.
Low-Carb Beef Stew
I called this a low-carb beef stew instead of a keto one because each bowl of stew has 8 grams net carbs. That’s on the higher end when it comes to keto-friendly recipes. But, it’s also so hearty and filling that you don’t need to eat much else with it.
This stew is mild enough that you can serve it to kids. If you want to add more heat to the stew, I suggest adding some jalapeno peppers and red pepper flakes.
Alternatively, you could add a few dashes of Sriracha to the stew instead.
How To Thicken Keto Beef Stew
When you use canned coconut milk, the stew will be perfectly thick. But if you want it to be even thicker, add a bit of xanthan gum, a pinch at a time.
It doesn’t take much xanthan gum to make the broth nice and thick. There is another swap you can make, if you want.
Instead of a turnip, cook a few radishes in the stew. Some people prefer the flavor of radishes more than turnips.
What To Eat With Beef Stew
This is such a hearty and filling stew that you don’t have to eat much with it. But if you’re wondering what other recipes will taste good with it, I have a few ideas.
Since it has curry flavors, it reminds me of food from India. So I like to eat it with a piece of keto-friendly flatbread, like Keto bacon jalapeno oopsie bread.
It is spicy and savory and tastes delicious with the stew. If you want something that’s a little milder, make some keto rosemary cloud bread.
And keto curry cauliflower rice is another low-carb side dish with similar flavors.
How To Store Beef Stew
Use coconut curry beef stew in your meal prep. You’ll never get tired of the flavors. Store the stew in an airtight and spill-proof container in the refrigerator for up to three days.
You can also freeze the stew, too! Let it cool completely, then place it in a freezer-safe and resealable food storage bag.
Put the bag of soup on a baking tray and place it in the freezer. After it’s frozen solid, remove the baking sheet. Keep the stew in the freezer for up to six months.

Ingredients:
Beef chuck roast cut into bite sized pieces
Olive oil
Salt and pepper
Butter
Onion
Minced garlic
Ginger paste
Curry powder
Turnip
Matchstick carrots
Coconut milk
Instructions:
Heat the olive oil in a skillet over medium high heat. Season the beef with salt and pepper to taste.
Saute the beef in the heated oil until browned on all sides. Remove and set aside. Melt the butter in a pot over medium heat.
Place the onions into the pot, and saute until softened.
Stir in the turnips, garlic, ginger and curry powder. Saute another minute.
Pour the coconut milk into the pot, and stir to combine.
Add the beef and carrots to the pot, and bring to a light boil.
Reduce the heat to medium low, cover and simmer for 20-25 minutes until the turnips are tender.
