Ingredients

  • 1 cup Cottage Cheese
  • 2 tbsp Sugar-Free Caramel Syrup
  • 1 tsp Vanilla
  • Pinch of salt
  • 1 cup Keto Chocolate Chips

Instructions

  • Mix together the cottage cheese, caramel syrup, vanilla and salt in a mixing bowl until well combined.
  • Drop the mixture by the spoonful onto a parchment lined baking sheet.
  • Put the mixture into the freezer until it begins to harden. At that time, if you would like your clusters to have a rounder appearance, you can shape the semi-solid cottage cheese mixture into more of a ball-like shape.
  • Return the clusters to the freezer for another hour.
  • Place the chocolate chips into a microwave safe bowl, and heat for 30 second intervals until melted and smooth.
  • Dip the clusters into the melted chocolate, and place back onto the parchment paper lined baking sheet. Allow the chocolate to set before serving.
