Plus, they will keep you in ketosis. What’s better than that?

Low-Carb Chocolate Clusters
I didn’t know what to call these little chocolate bites. They were partly inspired by my Keto Chocolate Caramel Nut Clusters.
But my nut clusters were actually made with nuts. These are made with just cottage cheese, a few other ingredients and covered in keto, friendly chocolate.
I kept the carb count really low with this simple dessert. There are only 4 g carbs in each serving!
And since they’re frozen, I like to pop them into my mouth after a really hard workout. They are so refreshing.
Cottage Cheese Chocolate Bites
I literally used four ingredients to make these tasty, creamy chocolate bites. Are they plain? Yes, they are. And that’s on purpose.
I kept them plain so you can make them any time of year. If you want to make them festive, stir some holiday-themed, low-carb sprinkles into the cottage cheese.
You can also use festive molds. Try this with Christmas ornament chocolate molds! They’re perfect.
Another change that would taste delicious would be to use white chocolate and both red and green food coloring. Then, you can make some of the bites red, and some green!
Low-Carb Chocolates With Caramel
Make a big batch of these cottage cheese chocolate bites at the start of the week and you’ll have a bunch of desserts to eat all week long.
Store them in a freezer safe food storage bag keep them in the freezer for up to six months
Can you store them in the refrigerator? Yes, you can but they might melt a little bit which could be a little messy
If you want them to soften and not be so hard to bite into, I would say the ones the counter for just a few minutes.

Low-Carb Cottage Cheese Chocolate Clusters Recipe
Here’s the list of the ingredients and steps that you’ll need to make these low-carb cottage cheese chocolate clusters. Exact measurements and instructions are located in the printable recipe card at the bottom of this post.

Net Carbs: 4 net carbs per serving
Ingredients:
- Cottage cheese
- Sugar free caramel syrup
- Vanilla
- Pinch of salt
- Keto Chocolate Chips
Instructions:
Mix together the cottage cheese, caramel syrup, vanilla and salt in a mixing bowl until well combined.
Drop the mixture by the spoonful onto a parchment lined baking sheet.
Put the mixture into the freezer until it begins to harden. At that time, if you would like your clusters to have a rounder appearance, you can shape the semi-solid cottage cheese mixture into more of a ball-like shape.
Return the clusters to the freezer for another hour.
Place the chocolate chips into a microwave safe bowl, and heat for 30 second intervals until melted and smooth.
Dip the clusters into the melted chocolate, and place back onto the parchment paper lined baking sheet. Allow the chocolate to set before serving.
