Ingredients

Apple Mixture

  • 2 Medium Zucchini peeled and chopped
  • 2 tbsp Butter
  • 2 tbsp Swerve Brown Sugar Substitute
  • 1 1/2 tsp Apple Pie Spice

Cranberry Mixture

  • 2 cups Fresh Cranberries
  • 3 tbsp Swerve Confectioner's Sugar Substitute
  • 2 tbsp Water

Dump Cake

  • 1 Box Keto Vanilla Cake Mix
  • 2/3 cup Melted Butter
  • 1/3 cup Almond Flour
  • 1/3 cup Swerve Brown Sugar Substitute
  • 1 tsp Ground Cinnamon

Instructions

  • Add the zucchini, butter, apple pie spice and Swerve brown sugar substitute to a skillet over medium heat. Saute until the zucchini is tender.
  • Place the cranberries, 3 Tbsp. Swerve confectioners sugar substitute and water into a pot over medium heat. Simmer until the cranberries are tender. Mash a few of them lightly with a potato masher or the tines of a fork.
  • Layer the “apple” and cranberry mixtures in the bottom of a well greased 9x9 baking dish.
  • Preheat the oven to 350 degrees.
  • Sprinkle the cake mix over the mixture, but do not stir.
  • Drizzle the butter over the cake mix, but again, do not stir it together.
  • Blend together the ⅓ cup almond flour, ⅓ cup Swerve brown sugar substitute and cinnamon in a bowl.
  • Sprinkle the mixture over the melted butter.
