Low-Carb Dump Cake
Have you ever made a dump cake before? The name pretty much gives away how you make it.
A dump cake involves just placing – or dumping – the ingredients into a loaf pan. There are two layers to this cake – the sweet and zesty apple cranberry layer and the vanilla cake mix one on top.
This is a really easy and super delicious cake! But please be careful with how much of it you eat.
Since there are a lot of ingredients (and they each have natural source of sugar), there are 8 grams net carbs per serving. I realize that’s pretty high, but I tried to keep it low by replacing the apples with zucchini and using a low-carb cake mix.
Cranberry Apple Dump Cake
Yes, you read that correctly! Even though it’s called an apple dump cake, I didn’t use any actual apples in it.
Instead, I used zucchini as the “apples.” I’ve had amazing results by doing this in other recipes, too. I used zucchini instead of apples in my keto apple fritter cookies and my keto apple pie.
When the zucchini cooks, it has a very similar texture to apples. It’s so similar that it’s tough to tell them apart (but some people can anyways).
The key to making them taste just like apples is to use plenty of seasonings. To mimic that apple pie taste, I used Swerve brown sugar substitute and apple pie spice.
If all you have is pumpkin pie spice, use it! It’s pretty much the same thing.

Low-Carb Apple Cake
There are a few things you should keep in mind when you make this cake. First, there isn’t really a substitute for Swerve brown sugar substitute.
This sweetener has a rich, deep, caramel flavor that will taste incredible with the cranberries and cake mix.
Next, make sure you use almond flour, not almond meal. If you use almond meal, it will taste grainy and don’t use coconut flour as a substitute, either.
It will make the dump cake too dry.
Finally, always read the ingredients in the cake mix before you buy it. Some companies use unhealthy ingredients and just add a ton of fiber to make it artificially low in net carbs. So, be careful!
How To Store Cake
Even though you can normally store a baked cake in an airtight container at room temperature, I recommend storing this one in the refrigerator.
Seal it tightly in an airtight container and keep it in the refrigerator. You can freeze the cake, too.
Store it in a freezer-safe cake container and seal it completely with a lid and/or aluminum foil.
Keep it in the freezer for up to six months. Let them thaw naturally in the refrigerator.

Apple mixture:
- Medium zucchini peeled and chopped
- Butter
- Swerve brown sugar substitute
- Apple pie spice
Cranberry mixture:
- Fresh cranberries
- Swerve confectioners sugar substitute
- Water
Dump cake:
- Box Keto vanilla cake mix
- Melted butter
- Almond flour
- Swerve brown sugar substitute
- Ground cinnamon
Instructions:
Add the zucchini, butter, apple pie spice and Swerve brown sugar substitute to a skillet over medium heat. Saute until the zucchini is tender.
Place the cranberries, 3 Tbsp. Swerve confectioners sugar substitute and water into a pot over medium heat.
Simmer until the cranberries are tender. Mash a few of them lightly with a potato masher or the tines of a fork.
Layer the “apple” and cranberry mixtures in the bottom of a well greased 9×9 baking dish.
4. Preheat the oven to 350 degrees.
5. Sprinkle the cake mix over the mixture, but do not stir.
6. Drizzle the butter over the cake mix, but again, do not stir it together.
7. Blend together the ⅓ cup almond flour, ⅓ cup Swerve brown sugar substitute and
cinnamon in a bowl.
8. Sprinkle the mixture over the melted butter.
9. Bake for 25-30 minutes, or until the cake mix is solid and cooked through.
