Low-Carb Cream Cheese Peach Roll-Ups

Sweet and rich and incredibly indulgent, these cream cheese peach roll-ups are also low-carb. They are so easy and baked to perfection.

Ingredients

  • 6 Zero Carb Small Tortillas
  • 1 medium Peach peeled and chopped
  • 2 tbsp Butter
  • 1 tbsp Swerve Brown Sugar Substitute
  • 1/2 tsp Cinnamon
  • 5 ounces Cream Cheese softened
  • 1/4 cup Swerve Confectioner's Sugar Substitute plus more for garnish
  • 1 tsp Vanilla Extract

Instructions

  • Melt the butter in a skillet over medium heat.
  • Add the peaches, brown sugar Swerve and cinnamon to the skillet, and stir to combine well. Saute until the peaches are a crisp tender.
  • Preheat the oven to 350 degrees.
  • Blend together the cream cheese, Swerve confectioners sugar substitute and vanilla extract.
  • Let the peach mixture cool a bit.
  • Fold the peaches into the cream cheese mixture.
  • Place a line of the cream cheese peach filling down the center of each tortilla.
  • Roll the tortillas closed over the filling, and place seam side down on a parchment lined baking sheet.
  • Bake until lightly browned and crispy.
  • Garnish with confectioner sugar substitute before serving.
