Ingredients

  • 3 cups Shredded Chicken
  • 3 Medium Yellow Squash chopped
  • 1 tbsp Butter
  • 1/2 Onion
  • 2 tsp Minced Garlic
  • 1 tsp Italian Seasoning
  • 1 cup Heavy Whipping Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Pork Rind Crumbs
  • 1/3 cup Parmesan Cheese grated

Instructions

  • Preheat the oven to 400 degrees.
  • Add the butter and onions to a skillet over medium heat, and saute for 2 minutes.
  • Mix in the squash, and saute for another 4-5 minutes.
  • Stir in the garlic and Italian seasoning, and saute for another minute.
  • Pour in the heavy whipping cream, and simmer until the mixture thickens.
  • Place the chicken into a mixing bowl, and pour the squash mixture over it. Season with salt and pepper to taste, and stir to combine well.
  • Spread the mixture into a well greased baking dish.
  • Sprinkle with the cheddar cheese.
  • Mix together the pork rind crumbs and parmesan cheese in a bowl.
  • Top the casserole with the crumb mixture.
  • Bake for 20-25 minutes, and allow to rest for 10 minutes before serving.
