And you can use both of them in this recipe, too! They will cook at the same rate and taste pretty good together.
The summer is the perfect time to make this chicken and summer squash recipe. People will have a bunch of fresh zucchini that grew in their gardens and you can find yellow squash all over the farmer’s market.

Creamy Chicken and Summer Squash
The creaminess of this casserole is what catapults it into the “comfort food” category. This is from the heavy whipping cream and melted cheddar cheese.

When you cook with them together, you don’t need any kind of thickener (like xanthan gum). The cream and cheese taste deliciously thick and creamy by themselves.
But don’t skip out on the crispy crust! It looks in all the gravy and flavor and there’s nothing quite like biting into the crispy topping with the creamy chicken and squash underneath.
I used pork rind crumbs for the topping. They’re perfect!
Then, add some parmesan cheese to give it even more crispiness and a slightly nutty flavor.
Chicken and Summer Squash Skillet
There are two ways to make this recipe. The first way will save you from having to wash an extra casserole dish.

Make everything in a large, deep, oven-safe skillet. Then, you can bake the casserole directly in the skillet.
If you don’t have a large oven-safe skillet, then I suggest transferring the casserole to a casserole dish. It’s just one more dish to wash, it’s really no big deal.
What To Eat With Squash
This delicious casserole has a familiar flavor – creamy garlic and onion. So I suggest serving it with some sides that have similar ingredients in them.

Either Low-Carb Greek Broccoli Salad or Low-Carb Amish Broccoli Salad could both work. The Greek salad will stand out more because it has a unique tanginess to it.
You could also make Keto Roasted Garlic Turnips and Green Beans with Bacon, but without the turnips. The turnips are higher in carbs and this squash recipe already has 6 grams net carbs.
How To Store Cooked Squash
If you want to add this recipe to your meal prep, I suggest eating it within a day or two. Honestly, the sooner the better!

As the chicken and squash sits in the fridge, the crispy topping will soften. Reheat the leftover in the microwave or the oven.
The oven will make it crisp back up. In fact, if you add more parmesan cheese, it will have that amazing crunch back!

Ingredients
- Shredded Chicken
- Yellow Squash
- Butter
- Onion
- Garlic
- Italian Seasoning
- Heavy whipping cream
- Shredded cheddar cheese
- Pork rind crumbs
- Parmesan Cheese
Directions

Preheat the oven to 400 degrees.
Add the butter and onions to a skillet over medium heat, and saute for 2 minutes.

Mix in the squash, and saute for another 4-5 minutes.

Stir in the garlic and Italian seasoning, and saute for another minute.
Pour in the heavy whipping cream, and simmer until the mixture thickens.
Place the chicken into a mixing bowl, and pour the squash mixture over it. Season with salt and pepper to taste, and stir to combine well.

Spread the mixture into a well greased baking dish.

Sprinkle with the cheddar cheese.

Mix together the pork rind crumbs and parmesan cheese in a bowl. Top the casserole with the crumb mixture.

Bake for 20-25 minutes, and allow to rest for 10 minutes before serving.
