Ingredients

  • 2 cups Chopped cooked chicken
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1 Orange Bell Pepper Chopped
  • 2 tsp Minced Garlic
  • 1/2 tsp Italian Seasoning
  • 1/2 tsp Basil
  • 1 large Zucchini peeled and chopped
  • 1/3 cup Matchstick Carrots
  • 1 cup Diced Tomatoes drained
  • 1/2 package Palmini Noodles rinsed and drained
  • 3 cups Chicken Broth
  • 1/2 cup Heavy Whipping Cream

Instructions

  • Melt the butter in a pot over medium heat.
  • Stir in the onions and peppers, and saute until they are softened.
  • Mix in the garlic, Italian seasoning and basil. Saute for 30 seconds.
  • Pour in the diced tomatoes, zucchini, palmini noodles, chicken and matchstick carrots.
  • Add in the chicken broth, cover and simmer until the zucchini is softened.
  • Stir in the heavy whipping cream, and simmer for 5 minutes longer before serving.
