Ingredients
2cupsChopped cooked chicken
2tbspButter
1/2Onion chopped
1Orange Bell Pepper Chopped
2tspMinced Garlic
1/2tspItalian Seasoning
1/2tspBasil
1largeZucchini peeled and chopped
1/3cupMatchstick Carrots
1cupDiced Tomatoes drained
1/2package Palmini Noodles rinsed and drained
3cupsChicken Broth
1/2cupHeavy Whipping Cream
Instructions
Melt the butter in a pot over medium heat.
Stir in the onions and peppers, and saute until they are softened.
Mix in the garlic, Italian seasoning and basil. Saute for 30 seconds.
Pour in the diced tomatoes, zucchini, palmini noodles, chicken and matchstick carrots.
Add in the chicken broth, cover and simmer until the zucchini is softened.
Stir in the heavy whipping cream, and simmer for 5 minutes longer before serving.
