Chicken soup is a classic recipe. It’s the all-purpose remedy for when you’re feeling icky, and there are so many different ways to change it up.

I’ve made keto cream of chicken soup in a bread bowl and keto creamy lemon chicken soup. This time, I added more veggies and my favorite pasta.
I don’t know about you, but I have a tough time eating as many vegetables as I should.
This soup is so delicious that you won’t even know you’re eating healthy. The cooked peppers, zucchini, and carrots basically make this soup a multi-vitamin in a bowl. And with 7 grams net carbs in each serving, it will fill you up, too.
Italian Zucchini Soup
Are you a fan of Italian herbs and seasonings? I know I am!

You can take this soup to a whole new level of deliciousness when you use fresh herbs. Try it with some fresh Italian parsley and basil leaves.
Dried seasonings work too. But you’ll notice a difference with the fresh herbs.
And don’t worry too much about which color of bell pepper you use. I used orange because it has a mild flavor and my kids aren’t big fans of the sharper green bell peppers but most people can’t tell a difference in the taste.
Creamy Zucchini Soup
I used heavy whipping cream to naturally thicken the chicken broth and make it a hearty and filling creamy soup. But if you’re lactose intolerant, replace the heavy whipping cream with canned coconut milk.

I used the canned version, not the kind in the carton. Canned coconut milk has more fat in it, which will make your soup creamier.
How do you make this soup even lower in carbs? You can lower the carb count by cutting the amount of carrots and tomatoes in half and only use half of the bell pepper.
I suggest working your meals around the soup and enjoying all 7 of those net carbs. They are full of vitamins and nutrients that you need.
Low-Carb Zucchini Soup
This low-carb creamy zucchini soup is perfect for your meal prep. Store it in an airtight and spill-proof container in the refrigerator for up to three days.

You can also freeze the soup, too! Let it cool completely, then place it in a freezer-safe and resealable food storage bag.
Put the bag of soup on a baking tray and place it in the freezer. After it’s frozen solid, remove the baking sheet. Keep it in the freezer for up to six months.
What To Eat With Soup
Since this soup is made with chicken, veggies, and high-fiber pasta, it’s an entire meal in a bowl. In fact, I think a bowl of creamy zucchini soup is the perfect thing to eat for lunch.

If you want to eat something with the soup, I suggest something light. A bowl of keto sliced cucumber chicken salad will be perfect with the soup or munch on some keto jalapeno deviled eggs.
For something sweet, make some keto gingerbread latte cookies or keto pink peppermint cheesecake.

Ingredients:
- Chopped cooked chicken
- Butter
- Onion chopped
- Orange bell pepper chopped
- Minced garlic
- Italian seasoning
- Basil
- Large zucchini peeled and chopped
- Matchstick carrots
- Diced tomatoes drained
- Package palmini noodles rinsed and drained well
- Chicken broth
- Heavy whipping cream
- Salt and pepper to taste
Instructions:

Melt the butter in a pot over medium heat. Stir in the onions and peppers, and saute until they are softened.

Mix in the garlic, Italian seasoning and basil. Saute for 30 seconds. Pour in the diced tomatoes, zucchini, palmini noodles, chicken and matchstick carrots.

Add in the chicken broth, cover and simmer until the zucchini is softened. Stir in the heavy whipping cream, and simmer for 5 minutes longer before serving.

- 1 Orange Bell Pepper Chopped
