3tbspButter
1/2Onion chopped
1large Carrot chopped
1/2cupCelery chopped
6ounces Mushrooms sliced
2tspMinced Garlic
1tspRosemary
1tspThyme
1tspPoultry Seasoning
2cupsLeftover Turkey chopped
1cupHeavy Whipping Cream
Instructions
Melt the butter in a pot over medium heat on the stove.
Stir in the onions, carrots and celery, and saute for 3 minutes.
Add in the mushrooms, and saute until the vegetables are beginning to soften.
Mix in the garlic, thyme, rosemary, poultry seasoning and salt and pepper to taste. Saute for 30 seconds longer.
Place the turkey into the pot, and pour in the broth.
Cover and simmer for 15 minutes.
Stir in the heavy whipping cream, and simmer uncovered for another 5-10 minutes.
