Ingredients

  • 3 tbsp Butter
  • 1/2 Onion chopped
  • 1 large Carrot chopped
  • 1/2 cup Celery chopped
  • 6 ounces Mushrooms sliced
  • 2 tsp Minced Garlic
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 1 tsp Poultry Seasoning
  • 2 cups Leftover Turkey chopped
  • 1 cup Heavy Whipping Cream

Instructions

  • Melt the butter in a pot over medium heat on the stove.
  • Stir in the onions, carrots and celery, and saute for 3 minutes.
  • Add in the mushrooms, and saute until the vegetables are beginning to soften.
  • Mix in the garlic, thyme, rosemary, poultry seasoning and salt and pepper to taste. Saute for 30 seconds longer.
  • Place the turkey into the pot, and pour in the broth.
  • Cover and simmer for 15 minutes.
  • Stir in the heavy whipping cream, and simmer uncovered for another 5-10 minutes.
