Leftover Turkey Soup
There are so many different ways to use leftover turkey. You can make sliders, make a sandwich, add it on top of chopped salad, or just warm it up and cover it with some low-carb gravy.
But this soup has to be one of my favorite ways to use leftover turkey because it doesn’t taste like you’re eating leftovers! The leftover turkey simmers in a rich broth that’s seasoned with rosemary, thyme, mushrooms, celery, carrots, and onion.
Then, I added some heavy whipping cream to thicken the broth and make it deliciously creamy. It’s a soup that you’ll look forward to eating.
Creamy Turkey Soup
Heavy whipping cream is my favorite way to thicken a keto-friendly soup. I love how mild it is.
The flavors allow all the other spices and vegetables to stand out and create a lovely dance on your tongue. But if you need to make a dairy-free soup, then use canned coconut milk. It’s just as good and just as creamy.
Another pro tip for you. Save the turkey carcass and boil it with your leftover veggie cuttings (like the tough ends of the green beans and the carrot peals.)
Add some salt and pepper and you’ll have a homemade turkey broth that tastes way better than anything you can get in the store. Strain it and save the broth to use in this soup.
Low-Carb Turkey Soup
There are only 4 grams net carbs in each serving of low-carb turkey soup. This is the perfect thing to eat when you need a light lunch or want to eat a bunch of different sides with it.
And it’s ready in just 25 minutes, making it a perfect last-minute recipe. To speed up the soup-making process, chop up the onion, carrot, celery, and mushrooms ahead of time.
Then, all you have to do is add everything to the soup pot and boil it.

How To Store Leftover Soup
This low-carb creamy leftover turkey soup is perfect for your meal prep. Store it in an airtight and spill-proof container in the refrigerator for up to three days.
You can also freeze the soup, too! Let it cool completely, then place it in a freezer-safe and resealable food storage bag.
Put the bag of soup on a baking tray and place it in the freezer. After it’s frozen solid, remove the baking sheet. Keep it in the freezer for up to six months.

Ingredients:
- Butter
- Onion chopped
- Large carrot chopped
- Celery chopped
- Sliced mushrooms
- Minced garlic
- Rosemary
- Thyme
- Poultry seasoning
- Leftover chopped turkey meat
- Turkey or chicken broth
- Heavy whipping cream
- Salt and pepper to taste
Instructions:
Melt the butter in a pot over medium heat on the stove. Stir in the onions, carrots and celery, and saute for 3 minutes.
Add in the mushrooms, and saute until the vegetables are beginning to soften.
Mix in the garlic, thyme, rosemary, poultry seasoning and salt and pepper to taste. Saute for 30 seconds longer.
Place the turkey into the pot, and pour in the broth.
Cover and simmer for 15 minutes. Stir in the heavy whipping cream, and simmer uncovered for another 5-10 minutes.

- 1/2 Onion chopped
- 1 large Carrot chopped
- 1/2 cup Celery chopped
- 6 ounces Mushrooms sliced
- 2 tsp Minced Garlic
- 1 tsp Rosemary
- 1 tsp Thyme
- 1 tsp Poultry Seasoning
- 2 cups Leftover Turkey chopped
- 1 cup Heavy Whipping Cream
Instructions
