Ingredients

  • 6 Large Eggs
  • 3/4 cups Heavy whipping cream
  • 1/4 cup Thousand Island Dressing Walden Farms makes a sugar free version
  • 6 oz Chopped deli corned beef
  • 1/2 cup Sauerkraut drained well
  • 1 cup Swiss cheese shredded
  • Salt and pepper to taste

Instructions

  • Heat the oven to 350 degrees. 
  • Whisk together the eggs, heavy whipping cream, thousand island dressing and salt and pepper to taste in a bowl. 
  • Place the corned beef, sauerkraut and Swiss cheese into the bottom of a well greased pie dish. 
  • Pour the egg mixture over the ingredients in the pie dish. 
  • Bake for 40 minutes, or until the eggs are firm and cooked through.
