Large eggs
Heavy whipping cream
Thousand Island Dressing (Walden Farms makes a sugar free version)
Chopped deli corned beef
Sauerkraut drained well
Swiss cheese shredded
Salt and pepper
Instructions:
1 Heat the oven to 350 degrees.

2 Whisk together the eggs, heavy whipping cream, thousand island dressing and salt and pepper to taste in a bowl.

3 Place the corned beef, sauerkraut and Swiss cheese into the bottom of a well greased pie dish.

4 Pour the egg mixture over the ingredients in the pie dish.

5 Bake for 40 minutes, or until the eggs are firm and cooked through.
