This low carb Crustless Reuben Quiche has become one of my favorite ways to enjoy the flavors of reuben sandwich. It’s cheesy, savory, and packed with flavor.

I love this keto quiche because it’s simple enough for busy days and It comes together with simple low carb ingredients. It’s a hearty comforting quiche that works for breakfast, brunch, or an easy weeknight meal.

It’s a family friendly quiche recipe that everyone will enjoy. The combination of corned beef, Swiss cheese, sauerkraut, and creamy dressing gives it all those classic keto reuben flavors, while the egg base gives it all the flavor and texture of a traditional quiche without the extra carbs.

At only 3 net carbs per serving, it fits perfectly into a low carb diet. It also reminds me of my favorite reuben casserole, which makes it even more comforting.

Net Carbs: 3 net carbs per serving

Ingredients:

Large eggs
Heavy whipping cream
Thousand Island Dressing (Walden Farms makes a sugar free version)
Chopped deli corned beef
Sauerkraut drained well
Swiss cheese shredded
Salt and pepper

Instructions:

1 Heat the oven to 350 degrees.

2 Whisk together the eggs, heavy whipping cream, thousand island dressing and salt and pepper to taste in a bowl.

3 Place the corned beef, sauerkraut and Swiss cheese into the bottom of a well greased pie dish.

4 Pour the egg mixture over the ingredients in the pie dish.
