1cupHeavy cream
1largeTomato sliced in half thinly
1cupMozzarella Cheese shredded
1/4cupParmesan Cheese grated
1tspDry Italian Seasoning
Instructions
Preheat your oven to 375 degrees F.
In a large bowl, whisk together the eggs.
Add the Italian seasoning, salt and pepper, followed by both cheeses and milk. Stir well.
Carefully pour the mixture into a 9-10 inch pie pan (I used a 9 ½ inch pan), then place in your oven. Bake for 15 minutes.
Once the quiche begins to set, carefully add the tomato slices on top. Return to the oven for another 35-40 minutes, or until the center is set and no longer jiggly.
Carefully remove the quiche from your oven and let cool slightly before serving.
