So you can call it either name. And this tomato quiche is a simple one with a ton of room for customizing and adding your favorite herbs and spices.
I spiced this one with some eggs, cheese, and Italian seasoning – that’s it! So, have fun with it and make it as spicy, zesty, or tangy as you like.
The bright red tomato rings on top add a pop of color and enhance the quiche’s nutrition. This is the perfect way to use up leftover garden tomatoes.
If you only have small tomatoes, slice them into rings and add as many of them as will fit on top.
Crustless Tomato Quiche
You’ll bake the quiche in a round pie plate. It has a tendency to stick to the plate, so spray the baking dish with nonstick spray before you add the egg mixture.

If you’re using a nonstick pan, you don’t have to worry about the spray. Think outside of the circle!
Pour the quiche in a square glass baking dish. Or double it and put it in a 9×13 casserole dish.
This is also the perfect recipe for making individual quiches in a muffin tin. Fill each muffin tin 2/3 full, giving it room to bake.
Low-Carb Quiche
What other herbs and spices will taste good with a tomato quiche, and what else can you mix into it? To give it some earthy nutty flavors, sprinkle in some mustard seeds.

Directions

Preheat your oven to 375 degrees F. In a large bowl, whisk together the eggs.

Add the Italian seasoning, salt, and pepper, followed by both cheese and milk. Stir well.

Carefully pour the mixture into a 9-10 inch pie pan (I used a 9 ½ inch pan), then place in your oven. Bake for 15 minutes.

Once the quiche begins to set, carefully add the tomato slices on top. Return to the oven for another 35-40 minutes, or until the center is set and no longer jiggly.

Carefully remove the quiche from your oven and let cool slightly before serving.
