Ingredients

Salad

  • 4 cups Broccoli Florets chopped into small pieces
  • 1/3 cup Feta Cheese crumbled
  • 1/3 cup Sun Dried Tomatoes chopped and patted dry
  • 1/4 Red Onion chopped finely
  • 2 tbsp Sunflower Seeds
  • 1/4 cup Kalamata Olives sliced

Greek Dressing

  • 1 cup Plain Greek Yogurt
  • 1 tbsp Lemon Juice
  • 2 tsp Greek Seasoning
  • 2 tsp Sugar-Free Honey
  • 1 tbsp Oil from Sun Dried Tomatoes Jar
  • Pepper to taste

Instructions

  • Mix together the broccoli, red onion, feta, sun dried tomatoes and olives in a mixing bowl.
  • In a separate bowl, whisk together the Greek yogurt, lemon juice, Greek seasoning, sugar free honey, oil from the Sun dried tomatoes and pepper to taste.
  • Pour the dressing over the broccoli mixture, and stir to combine well before serving.
  • Garnish with sunflower seeds.
