1poundeGround Beef
2tbspOlive Oil
2tbspSun Dried Tomatoes chopped
1/4cupFeta Cheese crumbled
1/4cupFinely Chopped Red Onion
2tspMinced Garlic
1/2tspGreek Seasoning
Salt and pepper to taste
Lettuce Leavesfor serving
Greek Yogurt Colesalw
1cupColeslaw Mix
1/4cupPlain Greek Yogurt
2tbspMatchstick Carrots
1/4cupGreen Onionsplus additional for garnish
1tspApple Cider Vinegar
1tspSwerve Confectioner's Sugar Substitute
Salt and pepperto taste
Instructions
Add the ground beef, sun dried tomatoes, ΒΌ cup feta, red onion, minced garlic, Greek seasoning and salt and pepper to taste to a large mixing bowl. Knead with your hands until well combined.
Heat the olive oil in a skillet over medium high heat.
For the meat mixture into four evenly sized burger patties, and saute until browned on both sides and cooked to your liking.
In a bowl, stir together the ingredients for the coleslaw.
Serve the burgers on a bed of lettuce, topped with the coleslaw.
Add green onions and additional feta for garnish if desired.
