This is a simple coleslaw recipe, with apple cider vinegar, carrots, and Swerve confectioner’s sugar substitute. But the Greek yogurt makes it thicker, creamier, and richer than other types of coleslaw. It will be a hit at dinner!

For the burgers:
Ground beef
Olive oil
Sun Dried tomatoes chopped
Feta cheese crumbled
Finely chopped red onion
Minced garlic
Greek seasoning
Salt and pepper
Lettuce leaves
For the coleslaw:
Coleslaw mix
Plain Greek yogurt
Matchstick carrots
Green onions + additional for garnish
Apple cider vinegar
Swerve confectioners sugar substitute
Salt and pepper
Instructions:
Add the ground beef, sun dried tomatoes, ¼ cup feta, red onion, minced garlic, Greek seasoning and salt and pepper to taste to a large mixing bowl. Knead with your hands until well combined.
Heat the olive oil in a skillet over medium high heat.
For the meat mixture into four evenly sized burger patties, and saute until browned on both sides and cooked to your liking.
In a bowl, stir together the ingredients for the coleslaw.
Serve the burgers on a bed of lettuce, topped with the coleslaw.
Add green onions and additional feta for garnish if desired.
