Ingredients

  • 7 Hard Boiled Eggs
  • 5 ounces Greek Yogurt plain
  • 1 tbsp Dijon Mustard
  • 1 tbsp Fresh Chives plus additional for garnish
  • 1/4 tsp Smoked Paprika or regular paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Juice from 1 Lemon
  • Keto Buns optional

Instructions

  • Peel & chop the hard boiled eggs.
  • In a large bowl, combine the chopped eggs with greek yogurt and mustard. Carefully fold together so you don’t mash the eggs.
  • Stir in the fresh chives, paprika, lemon juice, salt & pepper. Stir until everything is well combined. Add additional salt & pepper, per taste.
  • Transfer the egg salad to a serving bowl and garnish with additional chopped chives.
  • Serve on toasted buns/bread if desired.
