5ouncesGreek Yogurt plain
1tbspDijon Mustard
1tbspFresh Chives plus additional for garnish
1/4tspSmoked Paprika or regular paprika

Instructions
Peel & chop the hard boiled eggs.
In a large bowl, combine the chopped eggs with greek yogurt and mustard. Carefully fold together so you don’t mash the eggs.
Stir in the fresh chives, paprika, lemon juice, salt & pepper. Stir until everything is well combined. Add additional salt & pepper, per taste.
Transfer the egg salad to a serving bowl and garnish with additional chopped chives.
Serve on toasted buns/bread if desired.
