Classic egg salad is made from mayo, mustard, hard boiled eggs, and some spices. But when you use Greek yogurt instead of mayonnaise, you’re increasing the protein and giving it a tangier flavor.

In fact, Greek yogurt in egg salad tastes so good you won’t go back to mayo again. 

If you like bold flavors and nuances in your recipes, then you’ll love this egg salad. Mayo tends to fade to the background, allowing the mustard and other spices to stand out.

Greek yogurt is a bit more pronounced, but it works really well with the lemon juice, paprika, and fresh chives. 

Creamy Egg Salad 

It’s creaminess is the other reason you should use Greek yogurt in egg salad. It’s incredibly thick and smooth and mixes everything together perfectly.

Remember to always look at the ingredients label before you buy the yogurt. Make sure you’re buying plain and unsweetened Greek yogurt. 

You can also get creative with the mustard that you choose to use in this salad. The Dijon mustard gives it just enough flavors to pair well with the Greek yogurt.

If you want a flavor that’s a bit more muted, then use yellow mustard. To give it more heat, use spicy brown mustard. 

Best Spices For Egg Salad 

I only added two spices to the egg salad. I think the Greek yogurt, mustard, and lemon juice have more than enough to flavor.

You don’t really need a whole lot of spices for it. Fresh chives brighten the egg salad, adding naturally sweet flavors and paprika gives it smokiness with a hint of heat.

Other spices you could add include dill, parsley, or red pepper flakes. 

What To Eat With Egg Salad 

Greek yogurt egg salad is perfect for lunch. Serve it with another salad. Low-carb pea salad is creamy and zesty and tastes great with the eggs.

If you’re going to munch on the salad as a snack, then make some low-carb antipasto bites with it. They also taste perfect with some tomato basil cream cheese pinwheels. 

If you’re in the mood for a soup and salad lunch, then serve it with a bowl of low-carb Shepherd’s pie soup. Or for something even lighter, make keto turmeric zucchini soup. 

How To Store Egg Salad 

You can save yourself a lot of time by hard boiling all of your eggs ahead of time. Store hardboiled eggs in an airtight food storage container in the refrigerator for up to a week.

Then, after you make the salad, store it in an airtight container in the refrigerator for up to three days. 

Do not freeze this salad. It will change the texture and – trust me – it won’t be as appetizing.

Ingredients

  • Hard Boiled Eggs
  • Greek Yogurt 
  • Dijon Mustard
  • Fresh Chives
  • Smoked Paprika
  • Salt and Pepper
  • Juice from 1 Lemon 
  • Keto Buns 

Directions 

Chopping up hard boiled eggs

Peel and chop the hard boiled eggs. 

Adding mayo and mustard to egg salad

In a large bowl, combine the chopped eggs with greek yogurt and mustard. Carefully fold together so you don’t mash the eggs.

Adding spices to the egg salad

Stir in the fresh chives, paprika, lemon juice, salt and pepper. Stir until everything is well combined. Add additional salt and pepper, per taste.

Transfer the egg salad to a serving bowl and garnish with additional chopped chives.

Serve on toasted buns/bread if desired.

  • 7 Hard Boiled Eggs
  • 5 ounces Greek Yogurt plain
  • 1 tbsp Dijon Mustard
  • 1 tbsp Fresh Chives plus additional for garnish
  • 1/4 tsp Smoked Paprika or regular paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Juice from 1 Lemon
  • Keto Buns optional

Instructions
