Ingredients

Dough

  • 2 cups Mozzarella Cheese shredded
  • 2 ounces Cream Cheese softened
  • 1 cup Almond Flour
  • 1/4 tsp Xanthan Gum
  • 3 tsp Baking Powder
  • 1 large Egg

Egg and Ham Filling

  • 8 ounces Diced Ham
  • 1/2 Onion chopped
  • 2 tbsp Butter
  • 1 Green Bell Pepper chopped
  • 2 tsp Minced Garlic
  • 1/3 cup Parmesan Cheese grated
  • 1 1/2 cups Colby Jack Cheese shredded
  • 6 large Eggs
  • 1 cup Heavy Whipping Cream

Instructions

  • Preheat the oven to 350 degrees.
  • Place the mozzarella and cream cheese into a microwave safe bowl. Heat at 30 second intervals until the cheese is completely melted and combined.
  • Add the cheese down to a mixing bowl with the almond flour, xanthan gum, baking powder and 1 large egg. Knead until well combined.
  • Melt the butter in a skillet over medium heat.
  • Stir in the onion and bell peppers. Saute until the vegetables are softened.
  • Mix in the garlic, and saute for 30 seconds. Cool the vegetable mixture slightly.
  • Stir together the vegetable mixture, ham, colby jack cheese and parmesan in a bowl until well combined.
  • Whisk together six eggs and heavy whipping cream in a separate mixing bowl.
  • Layer the ham and cheese mixture into the bottom of a well greased oven-proof skillet or baking dish.
  • Pour the egg mixture over the top.
  • Form the dough mixture into small circles, and dot them over the top of the casserole.
  • Cover with tin foil, and bake for 20 minutes.
  • Remove the foil and bake for another 20 minutes, or until the eggs are cooked through and the top is browned.
