Preheat the oven to 350 degrees.
Place the mozzarella and cream cheese into a microwave safe bowl. Heat at 30 second intervals until the cheese is completely melted and combined.
Add the cheese down to a mixing bowl with the almond flour, xanthan gum, baking powder and 1 large egg. Knead until well combined.
Melt the butter in a skillet over medium heat.
Stir in the onion and bell peppers. Saute until the vegetables are softened.
Mix in the garlic, and saute for 30 seconds. Cool the vegetable mixture slightly.
Stir together the vegetable mixture, ham, colby jack cheese and parmesan in a bowl until well combined.
Whisk together six eggs and heavy whipping cream in a separate mixing bowl.
Layer the ham and cheese mixture into the bottom of a well greased oven-proof skillet or baking dish.
Pour the egg mixture over the top.
Form the dough mixture into small circles, and dot them over the top of the casserole.
Cover with tin foil, and bake for 20 minutes.
Remove the foil and bake for another 20 minutes, or until the eggs are cooked through and the top is browned.
