If this is your first time making (or eating) a bubble up bake, then let me warn you – it’s about to become your favorite way to bake an egg casserole! A bubble up bake starts out with a layer of eggs, cheese, and vegetables that are all mixed together.

This time, I added ham to make it more filling. The “bubble up” part of the name comes from the crispy balls of dough that bake on top of the eggs.
They’re made with my favorite fathead dough combination of mozzarella and cream cheeses, almond flour, xanthan gum, baking powder, and an egg to hold it all together. As it bakes, this dough becomes deliciously crispy and melts in your mouth.
Low-Carb Ham Bake
This simple ham bake is a bit high in carbs, so be careful with how much you eat at one time. That’s why I called it a low-carb recipe instead of a keto recipe.

The entire recipe makes six servings and there are eight grams net carbs in each serving. Yes, that’s a bit high, so count your macros carefully.
But I can tell you that all those carbs are worth it! One slice of this ham and cheese bubble up bake will fill you up! It’s made with lots of dairy, veggies, and ham and you won’t get hungry later.
Low-Carb Breakfast Bake
Since this ham and cheese bubble up bake is made with mostly eggs and vegetables, I consider it a breakfast or a brunch recipe but don’t let that stop you from eating it whenever the craving hits!

It’s delicious any time of day. You can change so many things in this recipe, too.
If you don’t like green bell peppers, leave them out or replace them with some chopped mushrooms. And if you don’t have any leftover ham, you can leave it out and make it without any meat or replace it with some crumbled and cooked breakfast sausage.

Make Ahead Egg Bake
How do you store leftover egg bake? Put it in an airtight container and keep it in the refrigerator.

For the best results, eat it within three days. You can freeze it, too.
Store the egg bake in a freezer-friendly (and oven-safe) container. I prefer something like an aluminum pie pan.
Then keep it covered tightly and stored in the freezer for up to six months.

Low Carb Ham and Cheese Bubble Up Bake

Ingredients
Dough
- 2 cups Mozzarella Cheese shredded
- 2 ounces Cream Cheese softened
- 1 cup Almond Flour
- 1/4 tsp Xanthan Gum
- 3 tsp Baking Powder
- 1 large Egg
Egg and Ham Filling
- 8 ounces Diced Ham
- 1/2 Onion chopped
- 2 tbsp Butter
- 1 Green Bell Pepper chopped
- 2 tsp Minced Garlic
- 1/3 cup Parmesan Cheese grated
- 1 1/2 cups Colby Jack Cheese shredded
- 6 large Eggs
- 1 cup Heavy Whipping Cream
Instructions
- Preheat the oven to 350 degrees.
- Place the mozzarella and cream cheese into a microwave safe bowl. Heat at 30 second intervals until the cheese is completely melted and combined.
- Add the cheese down to a mixing bowl with the almond flour, xanthan gum, baking powder and 1 large egg. Knead until well combined.
- Melt the butter in a skillet over medium heat.
- Stir in the onion and bell peppers. Saute until the vegetables are softened.
- Mix in the garlic, and saute for 30 seconds. Cool the vegetable mixture slightly.
- Stir together the vegetable mixture, ham, colby jack cheese and parmesan in a bowl until well combined.
- Whisk together six eggs and heavy whipping cream in a separate mixing bowl.
- Layer the ham and cheese mixture into the bottom of a well greased oven-proof skillet or baking dish.
- Pour the egg mixture over the top.
- Form the dough mixture into small circles, and dot them over the top of the casserole.
- Cover with tin foil, and bake for 20 minutes.
- Remove the foil and bake for another 20 minutes, or until the eggs are cooked through and the top is browned.
