Ingredients

  • 1.5 lbs chicken thighs cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 5 ounces cream cheese softened
  • 1 jalapeno pepper chopped
  • 1/3 cup bacon pieces
  • 1 cup cheddar cheese shredded
  • 1/4 cup green onions chopped

Instructions

  • Preheat the oven to 350 degrees.
  • Heat the oil in a skillet over medium-high heat.
  • Add the chicken to the skillet and season with salt and pepper to taste.
  • In a small bowl, combine the chili powder, cumin and paprika. Stir to combine.
  • Sprinkle the spices over the chicken, and stir to coat well.
  • Continue to saute the chicken until cooked through.
  • In a bowl, mix together the cream cheese, jalapeno and bacon pieces.
  • Mix the cream cheese mixture in with the chicken in the skillet.
  • Sprinkle the cheddar cheese on top.
  • Bake for 15-20 minutes.
  • Serve garnished with fresh chopped green onions.
