Ingredients
12ounceCan of Chicken drained
1/4cupChopped Celery
1/4cupFinely chopped red onion
1/3cupMayonnaise
Juice from half a lemon
1/3cupChopped Strawberries
1/3cupChopped Blueberries
Salt and Pepper to taste
1/3cupPecans
1/2tbspButter
1 1/2tbspGranulated Swerve Sweetener
Instructions
Add the butter to a pot over medium heat until melted.
Stir the granulated Swerve to the butter, and stir until melted, and caramelized.
Remove from the heat and stir in the pecans.
Spread the pecans out onto a parchment or silicone mat lined baking sheet. Allow to cool, and then break into pieces.
Stir together the chicken, celery, red onion, mayonnaise, lemon juice and salt and pepper to taste in a bowl.
Fold in the strawberries and blueberries.
Serve garnished with the candied pecans.
