Ingredients

  • 12 ounce Can of Chicken drained
  • 1/4 cup Chopped Celery
  • 1/4 cup Finely chopped red onion
  • 1/3 cup Mayonnaise
  • Juice from half a lemon
  • 1/3 cup Chopped Strawberries
  • 1/3 cup Chopped Blueberries
  • Salt and Pepper to taste
  • 1/3 cup Pecans
  • 1/2 tbsp Butter
  • 1 1/2 tbsp Granulated Swerve Sweetener

Instructions

  • Add the butter to a pot over medium heat until melted.
  • Stir the granulated Swerve to the butter, and stir until melted, and caramelized.
  • Remove from the heat and stir in the pecans.
  • Spread the pecans out onto a parchment or silicone mat lined baking sheet. Allow to cool, and then break into pieces.
  • Stir together the chicken, celery, red onion, mayonnaise, lemon juice and salt and pepper to taste in a bowl.
  • Fold in the strawberries and blueberries.
  • Serve garnished with the candied pecans.
