Ingredients

Buns

  • 1 1/2 cups Mozzarella Cheese shredded
  • 3 ounces Cream Cheese softened
  • 1 1/2 cups Almond Flour
  • 3 tsp Baking Powder
  • 1/2 tsp Xanthan Gum
  • Zest from 1 orange
  • 1/4 cup Heavy Whipping Cream
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsweetened Dried Cranberries
  • 1/3 cup Swerve Confectioner's Sugar Substitute

Icing

  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla Extract
  • Heavy Whipping Cream as needed

Instructions

  • Preheat the oven to 350 degrees.
  • Add the mozzarella and cream cheeses to a microwave safe bowl, and heat at 30 second intervals until completely melted and combined.
  • Place the cheese mixture into a mixing bowl with the almond flour, baking powder, ½ C Swerve, 1 tsp vanilla, egg, xanthan gum. ¼ C heavy whipping cream and orange zest. Beat until well combined.
  • Fold in the dried cranberries.
  • Wet your hands slightly, and form the mixture into 10 evenly sized buns.
  • Add the buns to a well greased baking dish, and bake for 25 minutes or until lightly browned and cooked through. Allow the mini buns to cool.
  • In a bowl. Whisk together the ½ cup of Swerve, vanilla extract and 1 Tbsp of heavy whipping cream until well combined.
  • Add more heavy whipping cream as needed to reach your desired consistency for the icing.
  • Drizzle the icing over the buns before serving.
