Orange Cranberry Buns
It seems like fall is when all the best baked goods start showing up on Farmer’s Market’s tables and store shelves. Instead of feeling like you’re missing out, go home and whip up a batch of these scrumptious sweet rolls.
They’re made with real orange zest and unsweetened dried cranberries, so the flavors are authentic. And I kept this recipe really simple, too.
If you have ever made anything with my fathead dough recipe, then you can make these rolls. There’s no rising, no complicated rolling or cutting.
Just mix together the ingredients, form them into small buns, place them in the pan and bake them.
Low-Carb Mini Buns
There are 5 grams net carbs in each orange cranberry bun, and this recipe makes around 10 buns. So it isn’t low enough in carbs to really allow you to eat as many as you want – but it’s still a very delicious and indulgent recipe.
If you want to lower the net carbs, leave the cranberries out. They will taste like sweet orange rolls, which is still very delicious.
Please use almond flour, not almond meal and if you try to use coconut flour, it won’t be a 1:1 swap. Coconut flour absorbs more moisture so the rolls will be too crumbly.
Cranberry Mini Buns
You don’t need any fancy kitchen gadgets to make these delicious orange cranberry rolls. You’ll need a microwave-safe bowl so you can melt the mozzarella and cream cheese.
After that, you’ll use a bigger mixing bowl and a baking dish. And please remember that this is a very sticky dough.
Unlike traditional baking where you can just add flour to make it less sticky, this time you’ll use water. If you keep your hands wet, the dough won’t stick to them as much but be careful not to use too much water, either.
You should also remember to grease your baking dish. The rolls are made with two types of cheese, so they are prone to sticking.

Low-Carb Orange Dessert
You can make these desserts ahead of time and then serve them hot to your guests. To do this, keep the mini buns in an airtight food storage container.
Store them without the icing. Then, heat them back up in the oven or the microwave and add the icing right before you serve them.
You can freeze them, too! I suggest freezing them without the icing.
Store them in a freezer-safe food storage bag or container. They will stay fresh for up to six months.

Ingredients
For The Rolls
- Mozzarella cheese shredded
- Cream cheese softened
- Almond flour
- Baking powder
- Xanthan gum
- Zest from 1 orange
- Heavy whipping cream
- Large egg
- Vanilla extract
- Unsweetened dried cranberries
- Swerve confectioners sugar substitute
For the icing:
- Swerve confectioners sugar substitute
- Vanilla extract
- Heavy whipping cream as needed
Instructions:
Preheat the oven to 350 degrees. Add the mozzarella and cream cheeses to a microwave safe bowl, and heat at 30-second intervals until completely melted and combined.
Place the cheese mixture into a mixing bowl with the almond flour, baking powder, ½ C Swerve, 1 tsp vanilla, egg, xanthan gum. ¼ C heavy whipping cream and orange zest. Beat until well combined.
Fold in the dried cranberries.
Wet your hands slightly, and form the mixture into 10 evenly sized buns. Add the buns to a well greased baking dish, and bake for 25 minutes or until lightly browned and cooked through. Allow the mini buns to cool.
In a bowl. Whisk together the ½ cup of Swerve, vanilla extract and 1 Tbsp of heavy whipping cream until well combined.
Add more heavy whipping cream as needed to reach your desired consistency for the icing.
Drizzle the icing over the buns before serving.
