9ouncesChicken Breastcut into strips
6ouncesExtra Firm Tofu
1tbspOlive Oil
1 1/2cupsChopped Purple Cabbage
6cupsGreen Leaf Lettuce chopped
1Avocado sliced
1/4cupCarrotsshredded
1/3cupRed Onionschopped
1/2cupCucumber sliced
1/4cupGreen Onionschopped
3tbspCilantrochopped
1/4cupMayonnaise
1tbspSriracha Hot Sauce
Instructions
Heat the olive oil in a pan over medium high heat on the stove.
Pat the tofu dry with a paper towel, but do not squeeze. Cut the tofu into small chunks and place them into the heated skillet.
All the tofu to sit until it is crispy on one side. Add salt and pepper to taste.
Flip the tofu over and allow it to become crispy on the other side. Remove the tofu and set aside.
Mix together 2 cups of lettuce and ½ cup of purple cabbage in the bottom of each of three bowls.
Mix together the mayonnaise and sriracha in a bowl until well combined.
Layer the cucumbers, carrots, avocado slices, green onions, cooked tofu, grilled chicken and red onions on top of the lettuce/cabbage mixture in the bowls.
Top with a sprinkle of fresh chopped cilantro.
Drizzle each salad bowl with the spicy mayo and serve.
