Ingredients

  • 9 ounces Chicken Breast cut into strips
  • 6 ounces Extra Firm Tofu
  • 1 tbsp Olive Oil
  • 1 1/2 cups Chopped Purple Cabbage
  • 6 cups Green Leaf Lettuce chopped
  • 1 Avocado sliced
  • 1/4 cup Carrots shredded
  • 1/3 cup Red Onions chopped
  • 1/2 cup Cucumber sliced
  • 1/4 cup Green Onions chopped
  • 3 tbsp Cilantro chopped
  • 1/4 cup Mayonnaise
  • 1 tbsp Sriracha Hot Sauce

Instructions

  • Heat the olive oil in a pan over medium high heat on the stove.
  • Pat the tofu dry with a paper towel, but do not squeeze. Cut the tofu into small chunks and place them into the heated skillet.
  • All the tofu to sit until it is crispy on one side. Add salt and pepper to taste.
  • Flip the tofu over and allow it to become crispy on the other side. Remove the tofu and set aside.
  • Mix together 2 cups of lettuce and ½ cup of purple cabbage in the bottom of each of three bowls.
  • Mix together the mayonnaise and sriracha in a bowl until well combined.
  • Layer the cucumbers, carrots, avocado slices, green onions, cooked tofu, grilled chicken and red onions on top of the lettuce/cabbage mixture in the bowls.
  • Top with a sprinkle of fresh chopped cilantro.
  • Drizzle each salad bowl with the spicy mayo and serve.
