Ingredients

  • 16 ounces Cottage Cheese
  • 1 pack Sugar-Free Vanilla Pudding
  • 1/2 cup Pumpkin Puree
  • 2 tsp Pumpkin Pie Spice
  • 1 cup Heavy Whipping Cream
  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 1/3 cup Pecans chopped
  • Sugar-Free Whipped Cream for garnish

Instructions

  • Stir together the cottage cheese, pudding mix, pumpkin pie spice and pumpkin puree in a mixing bowl until well combined.
  • Add the heavy whipping cream and Swerve to another mixing bowl, and blend until soft peaks have formed.
  • Fold the whipped cream mixture into the cottage cheese mixture until well blended.
  • Serve immediately garnished with whipped cream, or chill before serving if desired.
