This chilled dessert has a texture that rolls on your tongue in the best way. Keto pumpkin pudding with cottage cheese is a MUST make.
Pumpkin Cottage Cheese
Reimagine your favorite pumpkin pie into a chilled pudding and you have a tasty, high-protein keto dessert that you’ll crave! This no-bake dessert isn’t as heavy or rich as cream cheese fluff.
The vanilla pudding powder, heavy whipping cream, and cottage cheese combine to make a lighter dessert that is just as filling and nutritious.
Pumpkin puree is a nutrient-packed ingredient. Yes, pumpkin is higher in carbs, so it’s best to eat it in moderation.
That’s why I only used 1/2 a cup of pumpkin in this entire recipe (and it makes six servings). There are nine grams net carbs in each serving, so I count this as a low-carb recipe.
Pumpkin Protein Dessert
Even though it’s a bit higher in carbs, it’s still a fantastic choice for a snack or dessert. The cottage cheese, pecans, and heavy whipping cream are all wonderful sources of protein. That makes this snack a high-protein treat.
That makes this snack a high-protein treat.
I realize that the curds in cottage cheese sometimes take some getting used to. Not everyone is a fan, and that’s ok. If you don’t like cottage cheese very much, replace it with ricotta cheese.
It’s a perfect substitute. You can also substitute the cottage cheese with cream cheese, but then it will be really rich, so try it with a little bit at first.
Keto Pumpkin Pudding
Honestly, the cottage cheese is what gives the keto pumpkin pudding the nutrition and creaminess. I love using cottage cheese in my keto recipes because it is such a versatile ingredient.
If you don’t have any time to cook, make some keto creamed cottage cheese with honey. It takes just a few minutes and eliminates the curds.
If you’re craving a chocolate bar, make some frozen cottage cheese bark. It’s a crispy delight!
On the other hand, cottage cheese is known for tasting incredible in lasagna – especially this protein lasagna recipe.
Pumpkin Dessert With Whipped Cream
I love to double this recipe and save the extras so I have something sweet to snack on throughout the week. The best way to store this is in an airtight container in the refrigerator.
It will stay fresh for up to three days. Remember to store it without the pecans.
If you store it with the pecans, the nuts might soften in the refrigerator. And I don’t recommend freezing it. This will change the texture too much.
Pumpkin Pecan Dessert
The pumpkin puree and pecans are also full of nutritious minerals and vitamins, too!
Pumpkin is a fantastic source of vitamin A, which helps your body fight infections. If you ever feel under the weather, make something with some pumpkin puree and give your body that boost!
It’s also really good for your skin and eye health. The pecans are good for you, too.
Studies show that pecans can help people become more sensitive to insulin, which also helps with losing weight. They also play a role in lowering cholesterol and contain 19 vitamins and minerals. WOW!
