Ingredients

  • 2 large Chicken Breasts
  • 1 tbsp Mexican or Taco Seasoning
  • 1 tbsp Olive Oil
  • 1 cup Salsa
  • 1 cup Shredded Cheddar Cheese

Instructions

  • Cut the chicken breasts in half through the middle to form 4 thinner chicken fillets.
  • Season the chicken with salt, pepper and Mexican seasoning.
  • Place the oil in a skillet over medium heat.
  • Once hot, add the chicken fillets and sear on the first side until well-browned, about 3-4 minutes.
  • Flip the chicken over and continue cooking until chicken reaches an internal temperature of 165F. Remove from heat.
  • Preheat the oven to 450F.
  • Top each chicken fillet with salsa and shredded cheddar cheese.
  • Place the chicken in the oven and cook until cheese melts, about 3-5 minutes.
