Bring the flavors of your favorite Mexican restaurant to your dinner table! Low-carb salsa chicken is a 30-minute meal for your family.
Salsa Chicken
Perfectly cooked chicken tenders topped with spicy salsa and melted cheese – it’s the dinner of your dreams. With just four simple toppings, it’s impossible to get this recipe wrong. In fact, it’s one of the easiest recipes to customize.
You can feel like a chef in your kitchen, adding more spices and ingredients to your chicken.
This is also a simple recipe for your meal prep! Just shred or chop your chicken and you’ll have plenty of leftover chicken to use in salads, soups, and even keto enchiladas.
Is Salsa Keto
Yes, salsa can be ok on the keto diet, as long as you limit how much of it you eat, and you are careful with which kinds of salsa you eat. Mango salsa, for example, has too much sugar and carbs in it to be keto-friendly.
If you make your own salsa, it can definitely be keto-friendly. In fact, in 2 tablespoons of my homemade salsa, there are just 3 grams net carbs. It’s a sauce that you can easily fit into your keto diet, just keep track of your macros.
You could replace the salsa with keto guacamole if you are worried about the carbs in the salsa.
Baked Salsa Chicken
Whenever you bake chicken breast, I suggest either marinating it or browning it on the stove first. Baking chicken dries it out. Chicken thighs don’t dry out as much, so you can bake them without pre-browning or marinating them.
The chicken breast will cook faster if you cut it into thin tenders. You should also pay close attention to how you cut the chicken. Make sure they are all cut the same thickness, or else some pieces will cook faster than others.
Use an instant read food thermometer to check the internal temperature of the chicken. This is the best way to tell if it is fully cooked. The chicken should be cooked until it reaches at least 165F.
Keto Salsa Chicken
The only spices I used in on this chicken is salt and pepper and Mexican seasoning. You could use your favorite taco seasoning instead. It’s really easy to make your own taco seasoning. This recipe is keto-friendly and uses everyday spices.
You just need chili powder, garlic powder, onion powder, oregano, paprika, cumin, and salt and pepper.
Keto Mexican Food
Chop up the chicken and add it to a low-carb stuffed avocado. Add some cowboy caviar to the table and some Mexican cauliflower rice and you have a full feast ready to eat!
If you really want to go the extra mile, start the meal with some creamy taco soup. Yum!
