Ingredients

Brownies

  • 4 tbsp Butter melted
  • 1/2 cup Swerve Sugar Substitute
  • 1/2 cup Unsweetened Cocoa Powder
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 3/4 cup Almond Flour
  • 1/4 tsp Salt

Decorating

  • 1/2 cup Heavy Whipping Cream
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Swerve Confectioner's Sugar Substitute
  • 12 Strawberries

Instructions

  • Preheat the oven to 350 degrees and grease a mini muffin pan with nonstick cooking spray.
  • Whisk together the butter, sugar substitute, unsweetened cocoa powder, and vanilla extract until well combined.
  • Add the almond flour and salt and mix until just combined.
  • Spoon the batter into the prepared muffin pan and bake for 14 to 18 minutes.
  • Allow the muffins to cool for 5 minutes in the pan, then transfer to a wire cooling rack to cool completely.
  • When the brownies are cool, beat together the heavy whipping cream, sugar substitute and vanilla extract until thick peaks form.
  • Transfer the mixture to a piping bag and pipe a small dollop on the top of each brownie.
  • Place a strawberry on top of the whipped cream, then top the strawberry with another small dot of whipped cream. Serve immediately.
