Ingredients

  • 1 pound Sauerkraut Drained Well
  • 1/2 cup Matchstick Carrots
  • 1/4 Onion chopped finely
  • 8 Mini Peppers sliced thinly
  • 1/4 cup Sugar-Free Honey
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Olive Oil
  • 1/2 tsp Ground Mustard

Instructions

  • In a large bowl, stir together the sauerkraut, peppers, carrots and onions until well combined.
  • Whisk together the sugar free honey, olive oil, apple cider vinegar and ground mustard in a small bowl.
  • Pour the dressing mixture over the salad, and stir to combine.
  • Serve immediately, or chill before serving if desired.
