You’ll be shocked at how good it all tastes together. The flavors just work really well together.

The tangy cabbage works really well with the fresh carrots, onion, and peppers. Then, it’s all topped with an apple cider dressing that enhances the tangy flavors in the sauerkraut.

All together, this is an unforgettable salad! In fact, you can add it to your weekly meal prep and enjoy it all week long. 

Sauerkraut Salad With Veggies 

What are the best types of vegetables to add to a sauerkraut-based salad? You’ll want to add crispy veggies that are easy to slice into thin pieces and that have a mild and almost sweet flavor.

Mini Peppers

I used matchstick carrots and thinly-sliced mini peppers. This recipe makes six servings and each serving has just 5 grams net carbs.

If you change the vegetables, you’ll alter how many carbs each serving has. 

Keto Salad Dressing 

What salad dressing tastes good with the vinegar-based flavors in sauerkraut? You’ll want to make something with sugar-free honey so that it rounds out all the tangy flavors. 

Adding honey to the dressing

My apple cider vinaigrette has sugar-free honey for the sweet notes and ground mustard to give it a bit of an earthy bite. Use this combination for other salads you make, too! 

In fact, you can make a double portion of the salad dressing and keep it in the refrigerator. It will stay fresh for about a week.

Drizzle it on top of chopped cucumbers and tomatoes or a lettuce-based salad.

  • Matchstick Carrots
  • Onion 
  • Mini Sweet Peppers

Directions 

Sauerkraut

In a large bowl, stir together the sauerkraut, peppers, carrots and onions until well combined.

Adding dressing to the salad

Whisk together the sugar free honey, olive oil, apple cider vinegar and ground mustard in a small bowl.

Pour the dressing mixture over the salad, and stir to combine.

  • 1/2 cup Matchstick Carrots
  • 1/4 Onion chopped finely
  • 8 Mini Peppers sliced thinly
  • 1/4 cup Sugar-Free Honey
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Olive Oil
  • 1/2 tsp Ground Mustard
