Ingredients

Shrimp

  • 12 ounces Shrimp peeled and deveined
  • 1/2 tsp Garlic Powder
  • 1 tsp Old Bay Seasoning
  • 1 tbsp Olive Oil
  • 1 squeeze Fresh Lemon Juice
  • 1 tsp Sugar-Free Honey

Salad

  • 6 cups Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 4 Hard Boiled Eggs sliced
  • 1 Avocado sliced

Keto Thousand Island Dressing

  • 1/2 cup Mayonnaise
  • 1/4 cup Sugar-Free Ketchup
  • 2 tsp Dijon Mustard
  • 1 tsp Sugar-Free Honey
  • 1/2 tsp Worcestershire Sauce
  • 1 tsp Minced Garlic
  • 1 tbsp Capers drained
  • 1 squeeze Fresh Lemon Juice

Instructions

  • Mix together all of the ingredients for the dressing in a bowl, and chill until ready to serve.
  • Heat the olive oil in a skillet over medium high heat.
  • Add the shrimp to the skillet, along with the garlic powder, Old Bay seasoning, sugar free honey, lemon juice and salt and pepper to taste. Sear the shrimp until cooked through and allow to cool.
  • Place the lettuce into a large serving bowl, and top with the tomatoes, egg, avocado and shrimp.
  • Drizzle the dressing over the top of the salad, and toss before serving.
