Zesty capers, sweet mayo dressing, soft avocados, crispy lettuce, and juicy shrimp make keto shrimp Louie salad a must-make!
What Is Shrimp Louie Salad
Originating from California, shrimp Louie is a cobb salad with a shrimp twist. A classic shrimp Louie is made with avocado, hard-boiled eggs, shrimp, and tomatoes on a bed of lettuce.
It’s then topped with a Thousand Island dressing which is made with mayonnaise, ketchup, and tangy spices.
It’s a filling, savory, and slightly-sweet salad that is so hearty it can be your entire lunch or dinner. If you’re getting bored with lettuce salads, try this one! It will shake you out of your salad stupor.
Low-Carb Shrimp Salad
There are just 5 grams net carbs in each serving of low-carb Shrimp Louie. And when you make this recipe, it will give you four servings!
Every part of the salad is full of incredible flavors. The shrimp is seasoned with Old Bay, lemon juice, and sugar-free honey.
They taste so good that you might just want to make extra shrimp and eat them for another meal. Then it’s all topped with a tangy homemade keto Thousand Island Dressing.
Make extra dressing and store it in a sealed mason jar in the fridge. I love to dip chicken or raw veggies into it when I need something low-carb to munch on.
Shrimp Louie Salad
As you make keto shrimp Louie, feel free to make changes! If you don’t like Old Bay, then use some chili powder instead. Use lime instead of lemon juice or swap baby spinach for chopped Romaine lettuce.
You can also adjust the ingredient amounts in the dressing. Want it to taste sweeter? Then use more sugar-free honey? Do you want it saltier? Add more Worcestershire sauce. If you make changes to the recipe, let me know!
What To Eat With Shrimp Salad
This is a hearty and filling salad! You don’t need to serve much with it to feel full and satisfied. For something fun, make some keto garlic knots. They taste delicious with the zesty dressing.
Are you in the mood for a simple soup and salad lunch? Pair shrimp Louie with a bowl of Italian wedding soup. It has such a light broth that it goes really well with the filling salad.
Then for dessert, grab a slice of keto pumpkin earthquake cake. That’s the perfect way to finish a lovely meal.
How To Store Shrimp
Since this recipe makes four servings, keep the other three servings in the refrigerator for your lunch the rest of the week. I prefer to split up the other three servings into mini mason jars.
Mason jar salads are the perfect grab-and-g0 solution for keto dieters.
This shrimp salad will stay fresh in the refrigerator for up to three days. It’s best to store the dressing separately so that it doesn’t make the other ingredients too soft.
