Ingredients

  • 2 large boneless skinless chicken breasts cut in half lengthwise
  • 2 tbsp Olive Oil
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Pepper to taste
  • 1 1/2 cups Fresh Cranberries
  • 1/4 cup Water
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 2 sprigs Thyme
  • 1/4 cup Sugar-Free Maple Syrup

Instructions

  • Add the cranberries, water, Swerve and 2 sprigs of thyme to a saucepan over medium low heat.
  • Simmer until the cranberries are bursting open. Mash the cranberries lightly with a potato masher or the tines of a fork, and set the sauce off to the side to cool a bit.
  • Heat the olive oil in a skillet over medium high heat.
  • Season the chicken breasts with the thyme, rosemary, garlic powder, onion powder and salt and pepper to taste.
  • Sear the chicken in the heated skillet until browned on both sides and cooked through.
  • Stir the sugar free maple syrup into the cranberry mixture.
  • Serve the chicken with the sauce spooned over the top.
