It has the most incredible balance of flavors, too. From the traditional herbs – garlic, rosemary, and thyme – to the super-sweet cranberries on top, this is a chicken meal the everyone will remember fondly (and probably ask for again).
Sweet and Savory Chicken
This is the perfect main course to make for a large family. Two large chicken breasts makes four hearty servings and if you need to serve more people, just buy more chicken.
It’s really easy to adjust the flavors, too. If you want it sweeter, add a bit more sugar-free maple syrup.
If you want it to have an earthier flavor, add more onion powder. You honestly can’t go wrong.
Cranberry Chicken
Normally, cranberries are not a keto-friendly ingredient. They’re high in natural sugars that eating too many of them could kick you out of ketosis.
That’s why I only used a handful of them in the entire recipe. I also kept them as the topping.
So if you’re worried about they will affect your blood sugar, you can just scrape them off. But the flavor will still remain.
Cranberries have a fantastically sweet and tart flavor and I made them sweeter with Swerve confectioner’s sugar substitute and sugar-free maple syrup. That combination of sweeteners is perfect!
Keto Christmas Recipes

Chicken Meal Prep
This low-carb sweet and savory Christmas chicken is one of the best things to add to your weekly meal prep. Since there are so many different ways to eat it, you can make it a part of your lunches or dinner throughout the week.
When you remove the cranberry topping, you can add the chicken to a salad or a soup.
Store your leftover Christmas chicken in an airtight container. Keep it in the refrigerator for up to three days.
You can freeze this chicken, too. Place it in a freezer-safe storage bag and keep it frozen for up to six months.

Ingredients:
- Boneless skinless chicken breasts cut in half lengthwise
- Olive oil
- Thyme
- Rosemary
- Garlic powder
- Onion powder
- Salt and pepper to taste
- Fresh cranberries
- Water
- Swerve confectioners sugar substitute
- Sprigs of thyme
- Sugar-free maple syrup
Instructions:
Add the cranberries, water, Swerve and 2 sprigs of thyme to a saucepan over medium low heat.
Simmer until the cranberries are bursting open. Mash the cranberries lightly with a potato masher or the tines of a fork, and set the sauce off to the side to cool a bit.
Heat the olive oil in a skillet over medium high heat.
Season the chicken breasts with the thyme, rosemary, garlic powder, onion powder and salt and pepper to taste.
Sear the chicken in the heated skillet until browned on both sides and cooked through.
Stir the sugar free maple syrup into the cranberry mixture.
Serve the chicken with the sauce spooned over the top.
