Low Carb Taco Stuffed Avocado

These taco stuffed avocados is a delicious low carb recipe where you can enjoy all of the taco meat and all of the yummy toppings without the shell!

Ingredients

  • 1 pound ground beef
  • 1 white onion
  • 1/2 cup sharp cheddar cheese
  • 8 cherry tomatoes sliced
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 1 tsp cayenne may add more for extra heat
  • 1 tsp salt
  • 1 tsp pepper
  • 4 avocados sliced in half

Instructions

  • In a skillet, cook your beef and onions until beef is browned. Add in cumin, cayenne, paprika, and chili powder. Add salt and pepper. Stir well.
  • Slice avocado in half and remove the seed. Take a spoonful of the avocado out and set aside. Fill your avocado with ground beef, cheese, and tomatoes. 
  • Use leftover avocado from the spoonful to top!
