Looking for an easy, low carb Cinco de Mayo recipe? You’re in luck because this taco stuffed avocado is about as easy and low carb as it gets! In an attempt to stick to eating low carb, I decided to make this easy recipe. I’ve seen lots of variations to this recipe, but I kept it really simple and the results were delicious!
All you need is five ingredients and your typical taco seasonings like paprika, cumin, chili powder, and cayenne pepper for some kick! This recipe is an easy way to feed the whole family and still eat low carb.
You can also stuff your avocado with taco chicken, shrimp fajitas, or even this Mexican shredded chicken. I kept it simple and topped this taco stuffed avocado with tomatoes, cheese, and lettuce, but if you’re not worried about carbs, you can also top it with this Mexican street corn salad.

Low Carb Taco Stuffed Avocado
Prep: 5 Minutes Cook: 15 Minutes Serves: 4
Ingredients:
1 lb ground beef
1 white onion
1/2 cup sharp cheddar cheese
8 cherry tomatoes sliced
Cumin – 1 tablespoon
Paprika – 1 tablespoon
Chili powder – 1 tablespoon
Cayenne – 1 teaspoon *May add more for more heat
Salt – 1 teaspoon
Pepper – 1 teaspoon
4 avocados; sliced in half
How To Make Taco Stuffed Avocados
Instructions:
In a skillet, cook your beef and onions until beef is browned. Add in cumin, cayenne, paprika, and chili powder. Add salt and pepper. Stir well.
Slice avocado in half and remove the seed. Take a spoonful of the avocado out and set aside. Fill your avocado with ground beef, cheese, and tomatoes. You can use leftover avocado from the spoonful to top!
