Ingredients

  • 2 packages Miracle Noodles drained and rinsed well
  • 1 cup Low-Carb Marinara Sauce
  • 1/2 cup Ricotta Cheese
  • 1/4 cup Parmesan Cheese grated + 1 tablespoon, divided
  • 1 tsp Italian Seasoning
  • 1 1/2 cups Shredded Cheddar Cheese

Instructions

  • Preheat the oven to 400 degrees.
  • Layer 1 half of the miracle noodles in a small well greased casserole dish.
  • Stir together the ricotta, ¼ cup parmesan, Italian seasoning and salt to taste in a mixing bowl until well combined.
  • Spread half of the ricotta mixture over the noodles.
  • Spoon half of the marinara sauce over the ricotta layer.
  • Sprinkle on ½ of the mozzarella cheese.
  • Repeat the layer with the remaining noodles, ricotta mixture, marinara, mozzarella and 1 tbsp of parmesan cheese.
  • Bake for 25 minutes.
  • Let rest for 10 minutes before serving.
