Low-Carb Turtle Pumpkin Cheesecake Bars

Ingredients

Crust

  • 1 1/2 cups Almond Flour
  • 5 tbsp Melted Butter
  • 3 tbsp Swerve Brown Sugar Substitute

Filling

  • 16 ounces Cream Cheese softened
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/3 cup Keto White Chocolate Chips plus additional for topping
  • 1/2 cup Chopped Pecans plus additional for topping
  • 2 tbsp Sugar-Free Caramel Topping

Instructions

  • Preheat the oven to 325 degrees.
  • Add the ingredients for the crust to a mixing bowl, and blend until well combined.
  • Press the crust mixture into the bottom of a well greased 9x9 baking dish.
  • Bake for 10 minutes, and allow to cool.
  • Blend together the cream cheese, confectioners sugar substitute, vanilla and pumpkin puree until smooth and creamy.
  • Fold in the white chocolate chips and pecans.
  • Spread the mixture into the baking dish over the crust.
  • Place the baking dish into a 9x13 dish, and fill the larger dish with water until it is an inch or two up the side of the smaller dish.
  • Bake for 25 minutes.
  • Remove, and top with additional pecans and white chocolate chips for garnish once cooled a bit.
  • Chill for 2 hours before serving.
  • Drizzle with sugar free caramel sauce before serving.
