Crust
1 1/2cupsAlmond Flour
5tbspMelted Butter
3tbspSwerve Brown Sugar Substitute
Filling
16ounces Cream Cheese softened
1/2cupPumpkin Puree
1/2cupSwerve Confectioner's Sugar Substitute
1tspVanilla
1/3cupKeto White Chocolate Chips plus additional for topping
1/2cupChopped Pecans plus additional for topping
2tbspSugar-Free Caramel Topping
Instructions
Preheat the oven to 325 degrees.
Add the ingredients for the crust to a mixing bowl, and blend until well combined.
Press the crust mixture into the bottom of a well greased 9x9 baking dish.
Bake for 10 minutes, and allow to cool.
Blend together the cream cheese, confectioners sugar substitute, vanilla and pumpkin puree until smooth and creamy.
Fold in the white chocolate chips and pecans.
Spread the mixture into the baking dish over the crust.
Place the baking dish into a 9x13 dish, and fill the larger dish with water until it is an inch or two up the side of the smaller dish.
Bake for 25 minutes.
Remove, and top with additional pecans and white chocolate chips for garnish once cooled a bit.
Chill for 2 hours before serving.
Drizzle with sugar free caramel sauce before serving.
